Truffles
Truffles are mushrooms that live underground. They are shaped like tubers and their fleshy body is covered with a crusty layer. They are classified under different species: Magnatum pico (white truffles), Melanosporum Vit (black truffles), albidum, aestivum, brumale.
Truffles are mainly made of water and mineral salts that they absorb from the soil through the roots of the trees under which they live, namely poplars, lime-trees, oaks and willows. In fact, they become true parasites soon after forming. Their colour, taste and scent are determined by the nearby trees. For example, truffles growing near oaks will be more perfumed, whereas those near lime-trees will be paler and more aromatic. Their shapes depend on the soil: if it is soft, truffles will be smoother, if it is dense, truffles will be knotty and pimply owing to the lack of room.
